Just give us a date!

I think I'm going nuts from all the waiting.
We still don't have a due date, but I'm honestly just tired.
I want him home as soon as possible, and I have very little patients when its something I really want.
I wish they would just give him a due date and get it over with.
Even if he is extended
I just want to know what is up.
I need to know something, if I don't I can't ask for those days off, and there might be a chance I can't get it off because its just random like that.
I'm sure my coworkers will understand, but its not something I want to do to them.
Bleh I just hate all this extra stress. I don't need that.
Other then being frustrated I'm doing fine.
Michael is doing good too, just working and getting ready to come home.
I'm trying to keep positive, but not have at least something to go on is just driving me nuts.
Just 10% left...
that is it...
I hope these next to weeks don't drag....
I'm really crossing my fingers here.

Over 75% There

We're almost done with this deployment.
I'm so excited!
I honestly can't keep it inside sometimes.
Michael is doing good, mostly tired, but that is nothing new.
I'm so ready for this to be over.
We also decided where we want to go next.
I'm really excited, hopefully we'll get it.
If not I'll be happy where ever God sends us.

Oh my gosh I tried this recipie for our tuesday night bible study
and it turned out great!

Here is a pasted version of it.
I wish I would have taken a picture, but honestly it looks the same almost as the one on the website.
I also added some mushrooms to it and I really liked them in there :)
anyways! Super easy recipe! Give it a try!
2 cups canned diced tomatoes
2 cups tomato sauce
1 cup water
1/2 cup diced onion
1/2 cup diced green bell pepper
2 cloves garlic, chopped
1/4 cup chopped fresh parsley leaves
1 1/2 teaspoons Italian seasoning
1 1/2 teaspoons House Seasoning, recipe follows
1 1/2 teaspoons seasoning salt
1 1/2 teaspoons sugar
2 small bay leaves
1 1/2 pounds ground beef
8 ounces uncooked angel hair pasta
1 cup grated cheddar
1 cup grated Monterey Jack

Preheat the oven to 350 degrees F.

In a stockpot, combine the tomatoes, tomato sauce, water, onions, peppers, garlic, parsley, seasoning mixtures, sugar, and bay leaves. Bring to a boil over high heat, and then reduce the heat and let simmer, covered, for 1 hour. Crumble the ground beef in a large skillet. Cook over medium-high heat until fully cooked, with no pink color remaining. Drain the fat from the meat, and then add the ground beef to the stockpot. Simmer for 20 more minutes. Cook the pasta according to the package directions. Cover the bottom of a 13 by 9 by 2-inch pan with sauce. Add a layer of pasta and then a little less than 1/2 of each cheese; repeat the layers, ending with the sauce. Bake in the oven for 30 minutes. Top the casserole with the remaining cheese, return it to the oven, and continue to cook until the cheese is melted and bubbly, about 5 more minutes. Cut into squares before serving.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

Yield: 1 1/2 cups
Preparation tine: 15 minutes
Cooking time: 20 minutes
Ease of Preparation: Easy

And He says "I love you, I'll call you tomorrow."

For the last couple of days he has been waking me up at 5:30 or so am.
LOL now I wake up at that time regardless of he calls or not.
Just as I was about to post this he calls at 6:40 .

I almost gave up hope. Funny man...
and then he says those sweet wonderful words

Those words just make my heart melt.
We haven't fought during a conversation yet, but even if it wasn't all that great,
the hope that he will try his best to call me back tomorrow makes it all worth it.
Everyday I honestly feel like I love him more and more.
As much as my body minds the lack of sleep
Its so worth it to hear his voice every morning when I wake up.

Should we stay? (or should we go go...)

So should we extend? Or should we go...
I don't know how long the tour will be if we do....

Good Points about leaving the island

  • Starting out a new adventure!
  • Chance to see my friends and family again.
  • Making more and wonderful friends
  • Enjoy something different
  • Having a new house *hopefully*
  • We might get to be back in the mainland
  • OR we might be overseas again!
  • Get a chance to visit a different country *maybe*
  • OR if we get the mainland we can take road trips again!
I'm sure there are more reason to go! I just haven't thought of it yet. When I was a child a huge part of my dream was to travel... I'm also scared that if we stay this tour I won't be able to leave it once that ends...
*I will if I have to, but by then I'll be attached*

Why I don't want to leave

  • have to leave my wonderful friends *even though I know they are my friends for life*
  • living here is wonderful
  • Won't be able to experience things on the island anymore
  • Too expensive to visit here.
Regardless... living here we'll still have all those wonderful memories that all our great friends have provided.Image and video hosting by TinyPic
If this is part of God's plan I am not going to fight it one bit. I know its for the best, and that he isn't sending us anywhere to punish us. No place will ever be like here, but home is where God sends us.
Not where the military sends us.
Where GOD sends us.
He has the final say on all things.
Either way, we've been greatly blessed.

Albondigas <3

It was my first time trying Albondigas by myself and it turned out great!
I'm so proud of myself
I'm glad it was such a good hit with all my friends!

Anyways!
here is the recipe

Prep Time: 30 minutes
Cook Time: 2 hours,
Ingredients:

* 1 lb ground beef (or combination of 1/2 lb beef and 1/2 lb chorizo)
* 1/2 cup rice (uncooked)
* 1 teaspoon salt
* 1 teaspoon cumin
* 3 cloves of garlic, peeled and crushed
* 3 quarts chicken broth
* 4 stalks of celery, chopped
* 3 white onions, cut into quarters
* 1 bunch cilantro, leaves only
* 4 large carrots, peeled and chopped or sliced
* 2 cups greens (mustard, spinach or other)
* 2 teaspoons of oregano
* 2 cloves of garlic, crushed
* 1 teaspoon cumin

Preparation:
Mix ground beef with rice, 1 teaspoon of cumin, 1 teaspoon of salt and the crushed garlic. Form 1 1/2 tablespoons into a meatball by rolling it between your hands until it forms a ball. Do this with all of the meat until it is all formed into meatballs.

Bring broth to a boil in a large pot. Turn down to a slow simmer (where there are hardly any bubbles) and add in meatballs. Simmer gently for 20 minutes.

Add in the carrots, onion, cilantro, remaining spices, garlic and celery. Simmer for 1 hour and 15 minutes minutes or until rice in meatballs is cooked through. Add in the greens and simmer for an additional 15 minutes.

Serve hot with fresh flour tortillas.


I added small red potatoes
With a 1 1/2 cups rice to the actual soup.
Also if you can find some consome de pollo just add to taste.

Also add some lemon juice to it once served.
I find it taste better to me if you use corn tortillas rather then flour, but that's just my opinion.

Over the HUMP!!! YAY




We're at 53% done with this deployment!
Yay!!!
Which means........... I'm getting Michael back home soon!!! <3 Image and video hosting by TinyPic I can hardly hold it all in! I wonder how it'll be like when I reach my last month away from him, or even just a week before he is due home!
Not just that but Michael has made it a point to call me more often! I'm so happy right now I can just burst from joy. He is always working so hard. I'm so proud of my hubby, he is the best thing that has ever happened. Even though we're far apart he still tries to keep me happy. I don't ever want to live my life without him in it somehow. I'm the luckiest wifey in the whole world!
